Happy New Year! I realize it’s no longer January 1st, but…c’est la vie. After a wonderful, family-filled holiday season, it feels good to be back in Denver. My husband and I spent Christmas at my parents’ home in California, and it was so lovely. I ate my fair share of Mexican food, baked cookies with my brother, caught up with old classmates, established a daily nap routine, and cycled my way through a handful of spin classes. To bookend the holidays, I also traveled to Las Vegas and Santa Fe — both unforgettable, adventure-packed getaways. The last chapter of 2018 was truly one for the books.

During the month of December, I ended up taking an unplanned social media break. I went days without posting on IG Stories and neglected my IG feed for two weeks. I also spent very few hours answering emails. And to be honest, I loved my time away from technology. For the first time in years, I didn’t stress about working on Christmas Eve, nor did I spend hours glued to my computer after Christmas. Instead, I read, sat in my parents’ backyard, and hiked with my sister. Most importantly, I was able to prioritize the spirit of the holidays. Safe to say that I’ve officially set new priorities for Christmas / New Years —and they include minimal technology and more sleep, cookies, loved ones, and fresh air. I kicked off January feeling rejuvenated AF. And because of that, I’ve been tackling my to-do list with a vengeance. Fingers crossed my motivation hurls me right into February. 😉

At any rate, I hope your 2019 is off to an opportunistic, feel-good start. Whether you’re the type to set intentions, strive to be the type to set intentions, or fall somewhere in between, know that there’s no right or wrong way to start the new year. You can either put the pedal to the metal…or ease into it like any ordinary day. The best part? The choice is entirely yours. Regardless, there’s a lot of chatter about modifying your lifestyle, changing the way you look, and setting ambitious goals in January. But for many of us, it can be a bit much. Because quite frankly, if you’ve got a good thing going, there’s no need to rock the boat.

On the flip side, if you’re yearning for something more in your life — a fulfilling job, inspiring connections and relationships, improved body image, or a creative outlet to share your gifts and talents — there’s no time like the present. So, if ‘new year, new you’ strikes a chord, I’m rootin’ for ya. Like I said, there’s no right or wrong way to approach the new year. You do you. If you’ve decided to set 2019 goals, just remember that manifesting them is only a sliver of the equation. As you probably know, lofty goals require work — hard work. And it’s daily, repetitive action that will get you to the finish line. Also, be patient. After all, Rome wasn’t built overnight. 😉 Last thing I’ll say about goals: if you’re keen on taking shortcuts, you’re likely missing an important part of the journey.

Moving on…let’s talk about cookies. Delicious, slightly under-baked cookies, no less. First and foremost, they were inspired by this recipe. My husband and I went to a vision board party on Sunday (you know, #adulting), and I brought these in tow. My friend’s husband ate five, and the container was empty by the time we left. These happen to be gluten / grain-free (and you could easily make them dairy-free by using DF chocolate). These cookies are high in fiber, healthy fats, and protein, and they don’t call for refined sugar or flour. I mean, they’re basically a health food. They’re pillow-y soft, not overly sweet, and make for the perfect afternoon snack. Enjoy!

Soft Chocolate Chip Cookies

Prep Time 10 minutes minutes

Cook Time 15 minutes minutes

Total Time 25 minutes minutes

Ingredients

  • 1 1/2 cups almond flour
  • 5 tbsp coconut flour
  • 1/4 cup coconut sugar
  • 1/2 tsp ground cinnamon
  • 2 pinches of sea salt
  • 1/2 cup coconut oil melted and cooled
  • 1/4 cup maple syrup
  • 1 egg room temperature
  • 1/2 tsp vanilla extract
  • 3/4 cup combination of chopped dark chocolate and chocolate chips

Instructions

  • Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.

  • In a large bowl, add all dry ingredients (except the chocolate). Combine. In another bowl, whisk together all wet ingredients. Pour wet into dry. Combine.

  • Fold your dark chocolate / chocolate chips into the batter.

  • Using a tablespoon, individually scoop out the dough and place it on your baking sheet. If you want a thicker cookie, don’t flatten the dough. If you prefer a thinner cookie, flatten each dough ball with a fork. That said, no need to worry about giving the cookies room on your baking sheet. They will not spread!

  • Bake for 12-14 minutes, or until the edges have browned.

  • Let cool, then dig in! These will store in an airtight container, on the counter, for two days. To preserve freshness and shelf-life, store in the fridge — for 5-7 days — or in the freezer (for up to one month)
