One more weekend of March Madness. So many of the games this year have been nail-biters but that doesn’t mean you don’t need some low carb, gluten free snacks to get you through. Keto sausage balls with almond flour are my favorite for breakfast but are also great for game day.

Since they’re made with almond flour, they’re low carb, gluten free and keto friendly,but I personally think they’re a great alternative to traditional sausage balls made with flour. The almond flour adds texture and they’re not as doughy. No fork is required which makes them a great appetizer for game day.

While an ideal appetizer, they’re awesome for breakfast with a batch of homemade cinnamon rolls. They’re a Christmas morning tradition at our house.

What you’ll need for Low Carb Sausage Balls

  • Breakfast sausage – Anytime you make sausage balls you want to try to use the best sausage you can find since that’s the main ingredient. The better the quality, the less grease there’s going to be. My favorite is Neese’s hot sausage but if you’re not from this area, I really like the breakfast sausage from Whole Foods.
  • Almond Flour – I use Bob’s Red Mill. You want to use almond flour and not almond meal.
  • Cheese – If you can, don’t use the pre-shredded cheese, it will not melt as well. If you’re using a food processor, shred the cheese first and save some clean up.
  • Baking powder and an egg.

How to make Keto Sausage Balls

With only 5 ingredients, they’re just as easy to make as regular cheesy sausage balls . You can use a food processor, mixer or your hands.

  1. Dump all the ingredients into a bowl and mix with your hands until it’s well combined. If you have a food processor, it will mix it even better than your hands, but I’ve made this for years before I thought of trying the food processor. So it’s not necessary, just less messy. A mixer will work just as easily as a food processor.

2. Use a small ice cream scoop to help keep them the same size which will give you evenly cooked sausage balls. Roll them with your hands to form uniform balls.

3. Bake them on a rack or directly on parchment paper. Baking on a rack makes them less greasy.

You can eliminate some of the grease by baking them on a rack in a rimmed baking sheet. They’re best eaten while still warm, but I’ll make a batch and freeze them. Then in the morning, I just take out a couple and heat them up.

At the time of this post my team is still in it. Hopefully they can make it to the Final Four. If not, I’ll try to appease myself with more March Madness appetizers. We still have one more weekend of college basketball!

If you like to dip your sausage balls, I like a blue cheese or ranch dip.

Storing Keto Sausage Balls with Almond Flour

Store sausage balls in an airtight container in the refrigerator, or once cooled they can be frozen. To re-heat- let them thaw, sprinkle with water and warm in the oven at 350º for about 5 minutes. Microwaving sausage balls will make them rubbery.

Ingredients

  • 1 lb Sausage
  • 1 egg
  • 1 cup almond flour
  • 8 ounces cheddar cheese shredded
  • 2 teaspoons baking powder

Instructions

  • Preheat oven to 350º. Line a rimmed baking sheet with parchment and place a wire rack inside.

  • Combine all ingredients in a large bowl. Using your hands, mix well.

  • If using a food processor, grate the cheese first and add almond flour, baking powder and process until combined. Add half of the sausage and process, then add the rest of the sausage and the egg and process until well combined.

  • Using a small ice-cream scoop, form into balls about 11/2 to 2 tablespoons in size.

  • Bake for 18-20 minutes until slightly browned. Remove to wire rack to cool slightly.
